Muffintarts with soft heart of strawberry 🍓


Happy Sunday everyone!

Although the past few days it seemed like it had already arrived fall, I still think about summer, and I wanted something tasty that would remind it me a little.

Obviously I had strawberries and I thought I would do something with the filling of fresh strawberries ... and here is the muffintart!


I have to say that when I thought about the recipe I expected something more similar to a muffin, but then it came out more like a tart with a soft heart!

Delicious if warm, but also excellent cold, it could be ideal as snack or breakfast. Without butter, sugar and gluten-free, this light dessert will certainly delight your palate.

Serve it also as a dessert after a dinner, just heat it for a few seconds in the microwave and it will be as if just made!


But now let's find out the recipe!


Ingredients:

(for 4 muffintarts)


  • 150 g rice flour

  • 1 egg

  • 50 g + 1 tbsp honey

  • 40 g sunflower oil

  • 300 g strawberries

  • 8 g baking powder for desserts

  • 1 teaspoon lemon juice

  • 1 lemon zest

  • 1 pinch of salt



Method:


  1. Cut the strawberries into pieces and put them in a saucepan with the teaspoon of lemon and the spoon of honey. (Leave some to garnish).

  2. Put on a high heat for about 3/4 minutes, stirring often.

  3. When they have become liquid enough, add about a teaspoon of rice flour to thicken and turn off the heat.

  4. While the strawberries cool down a bit, start making the dough.

  5. Combine the egg, oil and honey and mix well with a whisk.

  6. Slowly add the lemon zest, a pinch of salt, half a sachet of yeast. Continue to mix and add the flour slowly.

  7. Now begin to mix with a spoon, because the dough will become very thick.

  8. Take the floured and oiled muffin molds, fill them 3/4 hollows.

  9. Pour a couple of spoons of our strawberry cream and cover with the remaining mixture, trying to spread it as much as possible with your hands.

  10. It doesn't have to be perfect!

  11. At this point bake in a static oven for 20 min at 180 °.



And here are these wonders! If you are a greedy person, you can sprinkle them with a little icing sugar ... I prefer them that way!
