Banana Bread is an American sweet bread made with banana puree. The recipe was standardized in U.S. cookbooks after the spread of baking soda and yeast.
Some food historians believe that Banana Bread was born during the Great Depression, when some housewives decided to reuse overripe bananas (an expensive item at the time) to make bread.
This sweet, soft and moist bread is perfect to start the day in a healthy and tasty way! Try it as a snack or as a dessert! 🤤
We tried it with homemade yogurt and also with peanut butter, but let your imagination take flight!
Ingredients:
3 bananas (2 to squash and 1 to decorate)
120 g instant oatmeal flour
40 g rice flour
2 spoonfuls coconut oil
Vanilla and cinnamon
1 spoonful dry yeast
2 spoonfuls sugar cane moscovado
100 g pasteurised egg white
Decorations:
Honey
Walnuts
1 banana sliced in half (paint with jam of your choosing to prevent it from blackening while cooking)
Oat flakes
Chocolate chips
Nuts
Preparation:
Squash two bananas (1 will be used for decoration) and add the other ingredients, stirring well.
Pour into a plumcake pan well covered with parchment paper.
Peel the remaining banana, cut two thin slices, paint it with jam and place it on the mixture. Add the other decorations.
Bake in conventional oven at 180° for 50/60 minutes.
10 minutes before you take it out of the oven, paint the surface with honey.
🌱 Vegan Version:
Don't use the honey and replace the egg white with vegetable milk or water!
We recommend to always do the toothpick test to see if it is cooked! 😉 For better storage, keep in the refrigerator and consume in 3 or 4 days; or you can cut it into slices and freeze it, when you want to eat it, just put it in the microwave for a minute!
